Freedom Celebration Buffet Menu

This is a full three course menu plus cheese board. All our menus can be tailored to meet our clients needs, this menu in particular can be altered to include your favourite buffet items.

Starters

Olives, nuts and Pretzels

Chicken and Mushroom Vol au vents

Mixed mushrooms and chicken breast in a white wine sauce

Smoked Salmon Blinis

served with sour cream, dill and lemon garnish

Petite quiches

served warm, with a salsa verde sauce

For the main Buffet

Whole poached Tasmanian Salmon

fully garnished, and served with hollandaise sauce

Mustard and Honey Glazed Baked Ham

carved to order, with a range of mustards

Rare Roast Scotch Fillet of Beef

served with Horseradish relish

Fresh prawns and oysters

served on ice, with a tangy seafood sauce

Salads

Baby potato salad, with mint, garlic, chives and parsley

Rocket, pear and parmesan salad

Broccoli, cherry tomato, avocado and char grilled capsicum

Garden Salad, fresh mixed leaves with French dressing

Fresh French and Italian breads, with butter and virgin olive oil

Desserts

Cheese Board

A great Australian cheese selection, with King Island Brie and Camembert, Blue Castello (a lovely creamy blue cheese, not Australian -sorry), matured Australian cheddar, and a light fruity cream cheese. All served with crisp water biscuits and grapes.

Clients Choice of Gateaux

Choose from our wide range of cheesecakes, frozen desserts, pavlova's, gateaux and tartlets

Fresh Australian fruit platters

Including, dependent on the season, strawberries, grapes, watermelon, kiwi, pineapple, blueberries

Fresh ground coffee, a selection of teas and hand made Belgian chocolates
